The pandemic has hit some of us more than others. That is life. If you have your health – Yamas. We carry on, that is what we must do. There is no doubt that the travel and hospitality industry have been hit hard. Very hard.
Lack of travellers; lack of events; opening and closings; erratic rules – made things very tough. But you know this. It has not been easy for consumers, and it seems that we can expect prices to go up as owner/operators struggle with higher costs with everything from labor, food stocks, and compliance.
And while local is still very important to the Food Industry, there is no doubt that we must keep an eye on what our neighbours are doing – and never has the neighbourhood been smaller with the growth of social media and the industry darling, Instagram. Some of these international trends were noted in a recent Technomic issue:
- Showcasing of local and niche fruits in limited edition tea beverages
- Night crowds want different fair from the earlier patrons
- Bigger – think coffee – is sometimes still viewed as better
- Mac and cheese as an entrée? Gaining ground in Australia
- Mexican foods gaining ground
- Will you have some Cannabis with that?
- A Pretzel – snack or desert?
How big is big? Well in America some are very big and some are so/so big. So, while Tim’s has about 4800 in Canada, in America they are a ‘bronze’ medalist.
